Okay, this isn’t quite a recipe (and isn’t quite ice cream), but it is a quick and easy fix for ice cream cravings on a hot summer day. Think of it as my apology for yesterday’s posting of a soup recipe in July.
- 1 can coconut milk (the thick stuff, not ‘lite’)
- fresh fruit of your choice (or frozen for an even quicker fix – I used frozen blueberries and blackberries, 1 oz of each; you can add more for more sweetness)
- vanilla extract (or extract of your choice)
Toss it all in a blender, whirl it up, and freeze to your desired consistency. When serving, sprinkle with more fruit, or shredded unsweetened coconut, or cinnamon, or cacao nibs…oh yum!
